The Bestest Brownie

1 1/4 C all purpose flour
1 tsp salt
2 T dark unsweetened cocoa powder
11 ounces dark chocolate (60 to 72% cocoa) coarsely chopped
1 C unsalted butter cut into 1 inch pieces
1 tsp dark unsweetened cocoa powder
1 1/2 C granulated sugar
1/2 c firmly packed light brown sugar
5 eggs @ room temperature
2tsp pure vanilla

Serves 1-40 (If you cut really tiny brownies, 40 from a 9 by 13 -inch pan, they are only 147 calories a piece)

Preheat oven to 350 degrees. Butter the sides and bottom of a 9 by 13 glass dish.

In a medium bowl whisk together flour, salt and 2 Tbs cocoa powder.

Put the chocolate, butter and 1 tsp cocoa powder in a large bowl and set over a saucepan of simmering water, stir occasionally until the chocolate and butter are completely melted and smooth. Turn off the heat, add sugars. Whisk till combined. Let cool to room temperature.

Add eggs one at a time and whisk till combined. Add vanilla. Do not over beat the batter at this stage or your brownies will be cakey!

Sprinkle the flour mixture over the melted chocolate mixture and fold (not whisk). Mix just till a bit of four is visible.

Pour into 9 by 13 and smooth top. Bake for 30 min, rotating pan half way through baking time, until a toothpick inserted into the center of the brownies comes out with a few moist crumbs sticking to it. Let the brownies completely cool then cut into squares and serve. (or hoard)

I know it may be a little early but I already have a few requests..... Juge, I want some of your "go to" raw and meatless dishes (your apple crisp). Annell, your bread recipe. Becky, whatever you've been creating lately.
